1. Tender Bar: A Classic Experience

Tender Bar
Tender Bar

Tender Bar, located in Ginza, is renowned for its classic cocktails and meticulous attention to detail. The bar’s ambiance is sophisticated yet welcoming, making it a favorite among locals and tourists alike. The master bartender, Mr. Kazuo Uyeda, is known for his signature ‘Hard Shake’ technique, bringing unique texture and balance to the drinks. Mr. Uyeda’s book, Cocktail Techniques, describes the details of his hard shake.

On our first visit in 2014, he was kind enough to autograph our copy and gave us a quick lesson on his hard shake. Sitting at the bar counter and watching his technique was the main attraction as well as his well-crafted cocktails. A visit here promises a refined experience where every sip is a journey through the art of mixology.

The atmosphere in Hoshi is intimate and inviting, creating a perfect backdrop for an evening of sophisticated indulgence. Hoshi offers their signature drinks, but we often find ourselves attracted to their seasonal and newly crafted cocktails.  The bartenders at Hoshi are artisans in their own right, ensuring that every glass they serve is a unique masterpiece, reflective of the bar’s commitment to excellence in the art of drink-making.
